Loose Cannon's inaugural wine, Phoenix, isn't just a blend of Pinot Noir and Chardonnay; it's a declaration. It’s a personal rebirth, bottled. Phoenix defies categorization, this not quite pét-nat, nor traditional sparkler seeks exploration. But what does that mean? 

Pét-nat, short for pétillant naturel [Peh-Tee-YOHN Nah-tu-rell], which means “naturally sparkling” in French. Pét-nat wines are popular fizzy wines made with minimal intervention. A Pét-nat is bottled with residual grape sugars, the yeast consume the sugar creating a naturally carbonated wine. They are often unfiltered, and only sometimes disgorged (meaning the yeast in the bottle is removed), and offer fresh, fruity flavors alongside wild, yeasty notes, making each expression uniquely interesting.

Traditional Method, is essentially how Champagne has been made for centuries. Unlike pét-nats which are bottled mid-ferment, the traditional method involves more distinct winemaker control. It begins with a fully fermented base wine, a second fermentation that creates natural carbonation in the bottle. These wines are then purposefully aged on the dead yeast cells (lees) to develop richer, often toasty or bready flavors, differing from the fresher, sometimes "wilder" profile of pét-nats. Traditional method wines are clarified by removing this yeast sediment (disgorgement) and may receive a final adjustment for sweetness (dosage), these final steps are often skipped or varied in pét-nat production for a less manipulated style.

Untraditional Method, resides somewhere in the middle of these. A Pét-nat is often bottled unfiltered adding to the sediment in the bottle, complicating the ability to retain all of the wine when it's opened table side. Phoenix takes some of the precision from traditional method, by filtering the wine and stabilizing it, preventing gushing, yet borrows the best of Pét-nat by delivering an expressive fresh wine while leaving the yeast in the bottle to allow the wine to evolve. Wait a year or more for the aged characteristics to develop or enjoy early for the most fruit expression.

Serving Suggestion: Give it a swirl table side if you like the creaminess yeast adds, or carefully pour off the yeast for a cleaner fruit forward expression. If you prefer a cleaner glass, pour straight into a glass, a decanting destroys the bubbles. For on premise by the glass serving it is recommended to gently swirl the yeast back into suspension before opening for a uniform product throughout service.

Phoenix is a series of untraditional method sparkling wines made by Loose Cannon. The first release Phoenix: New Birth was released in 2025 as a blend of Pinot Noir and Chardonnay from 2023 and 2024. They were grown in the Boathouse Vineyard during their conversion to organic viticulture overlooking Lake Leelanau in Northwest Michigan.
