Defiant of categorization, Phoenix is a sparkling wine that has undergone a second fermentation in the bottle, but unlike traditional sparkling wine it is left undisgorged to evolve in the bottle. Chill it thoroughly and pour the first serving clean leaving the sediment in the bottle. For the second pour gently swirl the sediment into solution to experience a subtly different wine. For by the glass service it is recommended to gently swirl the bottle upside down before opening for a uniform experience across service.
